International Value Chain C - (15 credits)

The module explores examples of successful value chains tracing the network of stakeholders from producer to consumer. It introduces food value chain from farm to table as a network between producers , processors, distributors and retailers. It examines the valued added activities using examples from the breadth of the food industry and considers how value chains may change in the future. Through this it will evaluate economic environmental and social sustainability. The module will also consider examples of products from concept design through to market. The role of the consumer and their different and changing expectations will be discussed as future drivers of change alongside the role of regulators, government and non-governmental organisations.
